Happy Holidays


I hope everyone had a Merry Christmas. Our family has been so very busy this holiday season. So busy that I've been slacking on the Pinterest recipes, whoops. This has been extremely hard to find a recipe for every night. But I got an electric pressure cooker for Christmas so expect some of those recipes.

I did manage to make a couple of meals over the last 3 weeks. My husband loves chicken cordon bleu so I found a Chicken Cordon Bleu Casserole it was really tasty. This is another great recipe to use a rotisserie chicken to save time. I tend to over salt things so I didn't add as much as I probably should have.

If you are looking for an easy party food the Hot Italian Sliders is the way to go. So easy to make and delicious. This will definitely be my go-to party slider from now on its a good spin on the normal ham and cheese sliders.


 German Schnitzel was fun to make although I did not make the pork thin enough I basically made a fried pork chop. Don't get me wrong it was still good just wish I would have taken a little more time to hammer it out to where you could almost see through it.


As I said earlier I got an electric pressure cooker for Christmas so I decided to test it out. First, make sure you read all the instructions on how to work it. We made Pizza Pasta it was good I got the husbands approval. This pressure cooker is going to be the greatest time saver everyone needs one!

Snow Week Eats

This past week I have made some awesome meals, the kids we super sick and it snowed. That's right I said it snowed, here in Texas!

Monday was pretty simple baked potatoes in the crockpot. We stuffed them with bacon, butter and cheese. So easy, right? You could stuff these baked potatoes with pretty much anything.

Tuesday I made a recipe my husband found on one of those Facebook food videos. Easy Honey Garlic Slow Cooker Ribs were so tasty. Falling off the bone delicious!




Now on Friday, we had frozen Baked Potato Soup that I made a couple of weeks ago. This recipe is so easy and would be great for a large group or for a small family you can get four meals out of it. The only thing that I did differently from the recipe was adding two Cups of shredded cheddar when I blended it.

Tonight we made Easy Ravioli Lasagna. According to my husband, it is the best thing I have made so far. The recipe just says to use tomato sauce so I seasoned it with Italian seasoning to add some flavor.

Leftovers

Hope everyone is having a great week! Today I'm home with sick kiddos, so what else to do but blog while the kids are eating a snack. Oh, and watching a Facebook live Lularoe sale, multitasking at it's best.

So Sunday night I made Dorito Casserole. Let me tell you it isn't the healthiest of meals but it's amazing. Just ask my coworkers they loved the leftovers. It is super easy to make, and everyone will love it. There are so many different versions of this recipe on Pinterest. I looked at most of them and they call for all sorts of ingredients. My recipe only has six ingredients. I'll pin my recipe so it will be out there on Pinterest for everyone.


Dorito Casserole

Ingredients


  • Rotisserie Chicken
  • Enchilada Sauce 15 oz can
  • Cream of Chicken Soup
  • Black Beans
  • Doritos
  • Shredded Cheese
Instructions

  1. Pre heat oven to 350 degrees F
  2. Shred rotisserie chicken into bite size pieces.
  3. In a medium sauce pan combine enchilada sauce, cream of chicken and drained black beans. Stirring bring to a boil then set aside.
  4. Start layering in a 9 x 13 casserole dish. Sauce, crushed Doritos (crush them as you go), shredded chicken and shredded cheese. Repeat until you run out of ingredients. On the top cover completely in cheese. 
  5. Cover with foil and bake for 30 minutes until things start to bubble.

Enjoy the leftovers. If you have any, you won't want to stop eating it.

Weekly Recap

This week has been great meals wise. I have been sticking to the meal plan and loved the leftovers for lunch. I did follow the recipes for the most part just making a few changes for time.

Monday after working until 5:30 I rushed home to make Beef & Broccoli Stir Fry the recipe was great. The only thing I would change next time is having the meat already pre-cut that would cut the prep time down. Using minute rice to save on time is a must if you are racing to put food on the table.

Tuesday has been the easiest so far just leave the Chicken and Gravy in the crockpot and let it cook all day. To save time when I got home I used instant mashed potatoes. The only thing I would change next time would be to add more salt and pepper to the chicken when seasoning and serve it with rice.






Wednesday we had Pork Chops with Wild Rice I have made multiple times before. I altered the recipe by doing a quick sear on the pork chops. I also added the cream of mushroom and milk with all the other ingredients instead of at the end.







Thursday's meal was one that I have been waiting to try. New Orleans Pasta & Sausage was super easy. Again, I would pre-cut the meat to save time. You can make this as mild or as spicy as you want by adding more or less cajun seasoning. It was so good my husband and I could not stop eating it.



Here is an easy late night snack that I tried on Tuesday night it was amazing! The 2 Minute Microwave Brownie was so good and light. Just make sure you don't microwave it for too long. At the very bottom of the picture, it says to microwave for 1 minute 40 seconds. The link does not work when you click on the pin so I just followed the picture instructions.

This Weeks Eats

Hello, I hope your week back from Thanksgiving break is going smoothly. This week I am going to do a trial run of Pinterest eats. I found this meal planner and have been using it for about a month now. 

It has been a crazy week back at school. Yes, I realize it is only Tuesday night, but I think everyone was exhausted after the first day back yesterday. The first two nights have gone great, a little rushed, but still good. This weeks menu is pretty fantastic if you ask me.



Mondays Beef & Broccoli was okay. The sauce thickened up a lot quicker than I thought it would. Also, I didn't tenderize the meat I may need to do that next time. Tonights Crock Pot Chicken & Gravy was really good. We had mashed potatoes with it instead of rice. Having rice three nights in a row might have been too much rice for one week. Tomorrow we have Pork Chops with Wild Rice. I have made this before it is one of my all-time favorites.

Thanksgiving Sides

I hope everyone is having a wonderful Thanksgiving. We are home with a sick little one so we had Thanksgiving at home this year. I still pulled off a pretty good Thanksgiving lunch. Here are the recipes for my Mother in laws green bean casserole and this amazing macaroni and cheese I found on Pinterest.


MIL Green Bean Casserole

Ingredients

  • 2 large cans of whole green beans
  • 2 cans of cream of mushroom soup
  • As much of a block of Velveeta cheese as you want
  • French fried onions
Instructions
  1. Pre-heat oven to 325℉
  2. Pour green beans into a 9 x 13 casserole dish
  3. In a separate bowl combine cream of mushroom soup and Velveeta cheese until fully combined.
  4. Pour mixture over green beans and stir lightly
  5. Place into 350℉ oven until bubbling
  6. Take out once bubbling and add french fried onions as desired
  7. Place back into oven for 5 minutes

Send Me Recipes

Hi everyone, my name is Dori and I am going to try to hopefully carry out a year full of Pinterest recipes. Why would I do that? Well, making the same things over and over gets boring. Wanting to change things up is challenging, especially if you have picky eaters in the house. I also like to know what I'm making for the week and stick to it. Want to stick to a meal plan go check out my Pinterest board and you will find multiple meal planners.
